Look at what greeted me on Easter morning! New snow. It’s supposed to be spring but we keep getting snow and it is so cold. I have to say it was gone by the afternoon but it was still cold.
The Easter Bunny knows that we love our mint truffle eggs for Easter and she didn’t let us down or is the Easter bunny a he?
I made this very simple french toast souffle the night before and put it in the oven this morning and everyone enjoyed it.
I’ll share the recipe. 1 loaf of french bread cut into slices and placed in a greased baking dish 9 x 13. In a blender mix 8 oz. cream cheese, 1/4 cup butter, 1/2 cup maple syrup, 1/2 tsp. vanilla, 8 eggs, 2/3 cup half and half and 1 1/2 cups milk. Blend and pour over bread. Chill overnight in the refrigerator. Bake at 375 for 45 minutes or until golden brown. Drizzle with 6 tablespoons melted butter and 1/2 cup powdered sugar. Enjoy!
